Few herbs have as much history and meaning attached to them as Rosemary. Long associated with remembrance, it also holds a special place in Australia as a symbol of commemoration, particularly in connection with Anzac Day and remembrance of those who have served.
Beyond its symbolism, Rosemary is one of the most useful plants to have in the garden. This hardy Mediterranean evergreen shrub has strongly aromatic, needle-like foliage that can be picked throughout the year and used fresh or dried to flavour roast meats, vegetables, breads and many other dishes.
Small blue flowers appear amongst the foliage and are attractive to bees, butterflies and other pollinating insects. Its dense, woody growth also responds well to clipping, making Rosemary useful as an aromatic hedge or topiary as well as a productive addition to herb gardens.
Drought tolerant once established and happiest in sunny, well-drained positions, Rosemary is equally at home in Mediterranean-style gardens, courtyards, pots and mixed garden beds.
Mature size: approximately 2 to 4 metres high × 1 to 2 metres wide if allowed to grow naturally. Regular pruning can keep plants considerably smaller.
Care & Growing Tips
Plant in full sun to light shade in free-draining soil. Rosemary is drought tolerant once established, but young plants should be watered regularly while developing their root system. Avoid consistently wet or waterlogged soil.
Clip annually to encourage dense, bushy growth and prevent plants becoming woody and bare at the base. Sprigs can be harvested throughout the year as required.
Rosemary is also easy to propagate from cuttings, making it simple to grow new plants from an established specimen.
