Lime Kaffir.
The Kaffir Lime leaf has a very fragrant (when crushed or chopped) double leaf. This is the lime preferred for Thai cooking, which has leaves with a serrated edge (not smooth) and the new growth is dark purple. Fresh young green leaves are best in cooking. The tree will produce a crinkly “alien” looking fruit, the zest of the fruit is extraordinarily flavoursome, and can be used to bring an exquisite limey flavour to dishes.
Care
• Plant in a sunny, sheltered location with well-drained soil
• Water regularly during dry periods, especially when fruiting
• Fertilise with a citrus-specific fertiliser in spring and late summer
• Prune in late winter to maintain shape and remove dead or crossing branches
• Protect young trees from frost; established trees tolerate light frosts
• Mulch to retain moisture, keeping mulch away from the trunk
